• 250 g lentils
  • 1-2c Carrots - small dice
  • 1-2c Potatoes - small dice
  • 1 Bell Pepper - small dice
  • 1 qt bone broth
  • Shallot
  • 1/4 tsp garlic salt
  • 1/4 tsp onion powder
  • 1/2 tsp paprika
  • 1/8 tsp shake cayenne
  • 1/4tsp chili powder
  • 1/4tsp chipotle powder
  • 1/8 tsp white pepper
  • 1 tsp salt

Spice and filling quantities are approximate and based on preference, so play around until it's what you want

  1. Soak lentils overnight
  2. Saute shallots and carrots until translucent
  3. Saute with potatoes for a couple minutes
  4. Add lentils and bone broth
  5. Cook, covered, around 10-20 min
  6. Cook down until desired consistency

As turnovers
...

  1. Preheat oven to 400F
  2. Place a small spoonful of filling into a rolled-out square of puff pastry
  3. Fold over into a triangle, seal with egg or water
  4. Brush the top with egg wash
  5. bake ~18min
